Horticultural crops, either fresh or in processed forms, are essential for people of all ages - infant to elderly, as they ensure a heathy living by providing vital vitamins, minerals, dietary fibre and bioactive compounds, etc. ICAR Research Complex for NEH Region, Manipur Centre, Imphal has been working on processing and value addition of horticulture products for a long time. A significant number of the standardized processed products have already been transferred to a large number of rural food processors and have gained popularity among the consumers. This has given the much-needed confidence to the authors in compiling the preparation method of all developed value-added products in form of a book in order to reach a larger audience of stakeholders. The publication has 10 chapters vividly describing small-scale preservation methods and processing technique of 115 value-added products covering 45 horticultural crops. The book is expected to be an useful practical guide for rural foodpreneurs and other stakeholders related to processing of horticulture commodities.

Dr. Y. Prabhabati Devi, Ph.D. in Home Science, is working as Subject Matter Specialist at ICAR-
Krishi Vigyan Kendra, Chandel under ICAR Research Complex for NEH Region, Manipur centre.
She is an alumnus of Assam Agricultural University, Jorhat. Her research interest focuses on post-
harvest processing and value addition. She has also developed many nutritious processed products
from fruits, vegetables, spices, indigenous mushroom and black scented rice and. She has more than
25 papers in her credit and made significant achievements in promotion of rural foodpreneurship in
Manipur. Dr. Y. Prabhabati Devi has received several awards including Eminent Scientist Award,
Women Scientist Award, Young Scientist Award in Home Science, Best Article Award, Best KVK
Scientist Award, Outstanding Women Scientist Award. She also has keen interest in developing
weaning foods for infants and nutri-thali of different tribes of Manipur.

Mr. Heikham Naresh Singh, M.Sc. in Horticulture, is working as Young Professional at Agri-
business Incubation Centre of ICAR Research Complex for NEH Region, Manipur Centre. He is an
alumnus of Annamalai University, Tamil Nadu. Mr. Naresh has a good experience in agripreneurship
development and provided business-incubation support to many entrepreneurs in Manipur. Apart from
supporting agripreneurs, he is dedicatedly involved in the analysis of nutritional value of fresh and
processed agri-horticultural products. Mr. Naresh has also authored a good number of research papers,
technical bulletins and training manuals.
Dr. Subhra Saikat Roy, Ph.D. in Horticulture, joined the Agricultural Research Service in 2008. He
has an excellent academic career and was also a visiting scholar at Michigan State University, USA.
Dr. Roy is presently working as Senior Scientist at ICAR Research Complex for NEH Region,
Manipur Centre. He is not only engaged in multifaceted research activities but also dedicatedly
working for promotion of agri-business ventures. As In-charge of Agri-Business Incubation Centre,
ICAR-Manipur Centre, he has promoted more than 40 agripreneurship. He also developed many
technologies including crop varieties, IFS models, organic POPs, value added products etc.;
commercialized eight technologies and filed one patent. Dr. Roy has published more than 50 research
papers in the journals of national and international repute, 8 books, 32 book chapters and more than
21 bulletins and manuals. He is the Editor of two peer-reviewed journals and recipient of many
prestigious awards including three national awards. For his successful social agripreneurship model
on community-based food processing venture, he received “National Entrepreneurship Award
(Ecosystem Builder)” in 2019 by the Ministry of Skill Development & Entrepreneurship, Govt. of
India.
